Question: When is Connie's birthday?
Additional Details: I think she's roughly 31, but I don't know her exact birthday

This question really has no answer. From the beginning, Connie has been somewhat immortal, leading to many jokes on the show about her being a teenager forever. When her character was introduced in the 1987 season she was a teenager in high school. By the 1998 season she was graduating high school. Since then, she's been taking college classes.
